My new book ‘Chai, Chaat & Chutney’ is here!
Chilla — light and healthy savoury pancakes — are a popular snack in Kolkata and many other parts of India. They taste wonderful with coriander and spinach chutney or chilli and garlic chutney, and with dal or a potato curry. Try making them with different varieties of lentils, if you like. Transfer the lentils to a blender and add the ginger, chilli, and coriander and blend until smooth. Tip the paste into a bowl and stir in the salt, semolina and the remaining ml 12fl oz water, mixing well. Combine all the topping ingredients in a bowl.
I travelled to the four corners of India — Mumbai, Kolkata, Delhi and Chennai — sampling the varieties of street food on offer. Each area has subtle differences in ingredients and techniques, making the local cuisine completely unique and full of character. The result is a completely fresh take on Indian cuisine. I love the fact that it is such a leveller — no matter what your background might be, standing at a popular street stall next to the other customers, you are all simply people enjoying the food. Most street food is freshly prepared to order, served very quickly and, best of all, extremely cheap. And, yes — there are also sweets to enjoy! My book takes you on a journey in each chapter to four of the most popular and diverse cities in India.
